This is a simple, easy and quick basic recipe for homemade old-fashioned cucumber salad.
Personally, I prefer to keep it as simple as possible. But you can easily add more flavours if you wish. For example, dill crowns, a little horseradish, a little ginger and/or some fresh chilli.
In the "old days", my mum first extracted the liquid from the cucumber slices with salt. This method produces a slightly different result, which I don't actually like as much.
The good news is that, in my opinion, the easiest way to make cucumber salad is also the best!
Homemade old-fashioned cucumber salad
Equipment
- 1 Food processor, mandolin slicer or grater that can cut thin slices
Ingredients
- 1 cucumber
- 1 dl sugar
- 1 dl vinegar
- ½ dl water
- ½ tsp salt
- Freshly ground pepper
Method
- I always make a batch of 2 cucumbers while I'm at it
- Pour sugar, vinegar and water into a saucepan. Heat and whisk until the sugar is dissolved. It doesn't have to boil, just dissolve the sugar. Cool to room temperature or colder
- Rinse the cucumber and cut it into uniform thin slices. I use my food processor, but a mandolin slicer or a grater with a ‘slicer’ is also fine. I wouldn't have the confidence to cut the uniform slices with a knife.
- Pour the marinade over the cucumbers. Store in a cold place.
