Homemade old-fashioned cucumber salad

agurk03

This is a simple, easy and quick basic recipe for homemade old-fashioned cucumber salad.

Personally, I prefer to keep it as simple as possible. But you can easily add more flavours if you wish. For example, dill crowns, a little horseradish, a little ginger and/or some fresh chilli.

In the "old days", my mum first extracted the liquid from the cucumber slices with salt. This method produces a slightly different result, which I don't actually like as much.

The good news is that, in my opinion, the easiest way to make cucumber salad is also the best!

The cucumber salad is ready to eat after an hour or so. I think it's better the next day. It will keep for a long time in the fridge - the texture and colour of the cucumbers will change slightly over time. I like it when they've had some time.

Equipment

  • 1 Food processor, mandolin slicer or grater that can cut thin slices

Ingredients

  • 1 cucumber
  • 1 dl sugar
  • 1 dl vinegar
  • ½ dl water
  • ½ tsp salt
  • Freshly ground pepper

Method

  • I always make a batch of 2 cucumbers while I'm at it
  • Pour sugar, vinegar and water into a saucepan. Heat and whisk until the sugar is dissolved. It doesn't have to boil, just dissolve the sugar.
Cool to room temperature or colder
  • Rinse the cucumber and cut it into uniform thin slices. I use my food processor, but a mandolin slicer or a grater with a ‘slicer’ is also fine.
I wouldn't have the confidence to cut the uniform slices with a knife.
  • Pour the marinade over the cucumbers. Store in a cold place.
