This is a simple, easy and quick basic recipe for cucumber salad. Personally, I prefer to keep it as simple as possible. But you can easily add more flavours if you wish. For example, dill crowns, a little horseradish, a little ginger and/or some fresh chilli.In the "old days", my mum would first extract the liquid from the cucumber slices with salt. This method produces a slightly different result, which I don't actually like as much. So the good news is that in my opinion, the easiest method is also the best.Agurkesalaten er klar til at spise efter en times tid. Jeg synes, den er bedre dagen efter. 1 Food processor, mandolin slicer or grater that can cut thin slices
Ingredients
1cucumber
1dlsugar
1dlvinegar
½dlwater
½tspsalt
Freshly ground pepper
Method
I always make a batch of 2 cucumbers while I'm at it
Pour sugar, vinegar and water into a saucepan. Heat and whisk until the sugar is dissolved. It doesn't have to boil, just dissolve the sugar. Cool to room temperature or colder
Rinse the cucumber and cut it into uniform thin slices. I use my food processor, but a mandolin slicer or a grater with a ‘slicer’ is also fine. I wouldn't have the confidence to cut the uniform slices with a knife.
Pour the marinade over the cucumbers. Store in a cold place.
